    Chetra Chau, the executive chef behind The Dream Tacos, moved to the U.S. from Cambodia at the age of eight. The pinnacle of his long career is The Dream Tacos, a new, globally inspired fusion taco spot that draws a bit of influence from every cuisine that Chau has dabbled in. Tacos inspired by recipes from Japan, England and even his hometown in Cambodia make a meal here a truly one-of-a-kind experience.

    Try the Indian-fusion tandoori chicken taco dipped in a white wine tandoori sauce or the Vietnamese Banh mi taco, which has classic banh mi ingredients nested inside a soft taco shell. A bulgogi Korean taco has thin slices of beef marinated in Chau’s specialty bulgogi sauce and crowned with chopped scallions.

    Dallas is a hotspot for international spinoffs and Kati Roll Company falls in that bucket. This Indian street food spot by way of New York City opened downtown in early April. Kati rolls are skewered meats coddled in warm paratha flatbread and served with a lime-cilantro chutney made daily. Meats are halal, and mango lassis are made with organic yogurt. Kati Roll Company appears to be in the early opening phase, so check the website before heading over.

    Owner Khoa Nguyen has created an Asian fusion restaurant that doesn't feel like a "fusion" restaurant. Instead, Nguyen has toyed traditional dishes while retaining authenticity to provide diners with "refined Vietnamese" -- his words. The Vietnamese rib-eye carpaccio appetizer is an example of this. The thin slices of steak are presented in the authentic Vietnamese salad format with its traditional accompaniments of shrimp chips and fish sauce. Lemongrass' banh xeo (a savory pancake made with rice flour), which Nguyen says is the restaurant's specialty, is a favorite. Nguyen will likely recommend the charcoal-broiled lemongrass pork with vermicelli and the steak cubes with garlic and fresh pasta if he takes your order. In keeping with such inspired dishes, diners would do well to keep in mind such creativity comes with a higher price point.

    Highland Park’s fine-dining restaurant Madrina manages to take Mexican food to levels it has never achieved in Dallas by infusing the cuisine with French techniques and lofty aspirations. Where else can you get duck confit enfrijoladas next to a whole lobster served en croûte? Fussy french preparations tend to exceed the boundaries of this kitchen’s capabilities, but some simpler dishes satisfy and the drinking here is good. Don’t miss the wild setas, a plate of fried mushrooms with a tangy poblano cream sauce, or the tacos di chivo, which produces a cast iron skillet filled with meltingly tender goat meat. Both plates come with a short stack of freshly made tortillas, resulting in some very compelling tacos.

He wanted to present his own vision of a fusion cuisine that combines elements of Japanese, Italian and French cooking, and he wanted to do it in an elegant and refined setting. With the help of his general manager, Yoshi Kawakami, he was finally able to make this second dream come true when the space next door to his ramen restaurant in Lewisville became available.
